
Tell us about your career journey:
From the moment I started working in restaurants and hotels I’ve always had a passion for fresh local produce, and I carried that over when I moved into contract catering as a development chef. That first role was for a small caterer doing everything from schools to corporate events and I moved around a few companies as culinary lead before coming to Sodexo.
What’s your vision for school food?
It’s my vision to change school meals as we know them, and to educate the next generation on what good food looks like.
To me, Every meal is a big deal means every plate of food – from a humble sandwich to an exotic world dish – is the absolute best it can be, made with care and great ingredients.
Best school meal memory:
When I was at school, it was always a good day when the smell of lasagne baking was wafting down the hallways, and I want our pupils to feel that same excitement for the food we serve.
Have you cooked for anyone famous?
Of course I consider our pupils my VIP customers but I’ve also met and cooked for some famous faces over the years, including the late Queen, the current King and the band Take That.
