Loaded Chicken Fajita Wrap

What you’ll need

  • 4 x 10” Tortilla wraps
  • One red onion
  • 1 Red pepper
  • Half a teaspoon of Cajun spice
  • 1 tablespoon of vegetable oil
  • 150g easy cook long grain rice
  • 2 tomatoes
  • 50g sweetcorn
  • 2 chicken breasts
  • A small bunch of coriander
  • 30g mature cheddar cheese

Preparation:

Slice the chicken into strips about 1 cm wide.

Seasoning: Toss the sliced chicken with the Cajun spice mix.

Vegetable prep: Peel and slice half of the red onion and dice the other half.

Deseed and slice the peppers.

Coriander prep: Wash, pick and chop the coriander leaves.

Cook the rice until tender and keep warm.

Method:

1. Slice the chicken into strips about 1 cm wide.
2. Seasoning: Toss the sliced chicken with the Cajun spice mix.

  • Heat the vegetable oil in a pan.
  • Sauté the seasoned chicken until lightly browned.
  • Add the sliced onions and peppers, cooking until the chicken is thoroughly cooked.
  • Taste check – ensure the flavours are balanced and adjust seasoning if needed.
3. Assembling the wrap:

  • Warm the tortillas in a pan and place them onto the plates.
  • Add the cooked rice to the tortillas and spread evenly.
  • Top with the chicken and vegetable mixture, a serving of fresh tomato salsa, and the grated cheese.
4. Serve and enjoy
