  • Half a red onion
  • Half of a green pepper
  • Half of a red pepper
  • Half of a yellow pepper
  • 80g kidney beans
  • 60g cheddar cheese
  • 40g chunky salsa
  • 40g butter beans
  • 40g chickpeas
  • Hand full of coriander
  • Paprika
  • Cajun spice

Preparation:

Dice your onions and peppers into equal sizes.

Grate the cheese

Prepare the salsa

Method:

1. Add oil to the pan and heat on medium/high
2. Sauté the onions and peppers with the cajun powder and paprika until soft.
3. Add the beans and half the salsa
4. Warm the tortillas in the microwave or hob
5. Spread the centre of the tortillas with the remaining salsa
6. Top with the bean and pepper mix, grated cheese and chopped coriander.
7. Fold and roll into a parcel and bake in the oven at 160 degrees celsius for 10 minutes
8. Serve
